3 Layered Eggless Cake

Time to prepare : 1.5 hrs | Serves : 4

Ingredients:

  1. All purpose flour(Maida) : 3 cups ( 1 cup for each layer)
  2. Powdered Sugar : 2.25 cups ( 3/4 cup for each layer)
  3. Baking powder : 3 table spoon ( 1 tbs for each layer)
  4. Baking soda : 3/4 table spoon ( 1/4 tbs for each layer)
  5. Cooking Oil : 1.5 cups ( 1/2 cup for each layer)
  6. Ripened Banana : 3
  7. Ripened Mango : 3
  8. Cocoa powder : 2 table spoon
  9. Vanilla icing : for frosting
  10. Red cherries : for garnish

Preparation method:

Banana Cake(lower layer) : please refer ingredients list for measurements.

Step 1: Sift Maida and baking powder to get a fine mixture. Add powdered sugar to the mixture.
Step 2: Grind bananas and oil to get a semi-liquid mixture.
Step 3: Add the semi liquid mixture to the flour mixture and stir well to make the cake batter, ensure there are no lumps in the batter. Add baking soda and mix lightly and keep aside the batter.
Step 4: Preheat the airfyer/ oven for 5 minutes at 200°C.
Step 5: Grease the cake mould and pour the mixture in the cake mould
Step 6: Cook in the airfryer/oven at 200°C for 10- 15 min. Remove from oven and let it cool for 5min.

Chocolate Cake(middle layer):

Step 1: Sift Maida and baking powder to get a fine mixture. Add powdered sugar and cocoa powder to the mixture. Grind the mixture adding oil to get a semi liquid mixture.
Step 2 : Stir the semi liquid mixture well to make the cake batter, ensure there are no lumps in the batter. Add baking soda and mix lightly and keep aside the batter.
Next steps : Follow the steps from Step 4 to Step 6 of banana cake! Yuppie…second layer done! Keep it aside and let it cool.

Mango Cake(top layer):

Step 1: Sift Maida and baking powder to get a fine mixture. Add powdered sugar to the mixture.
Step 2: Grind mangoes and oil to get a semi-liquid mixture.
Step 3: Add the semi liquid mixture to the flour mixture and stir well to make the cake batter, ensure there are no lumps in the batter. Add baking soda and mix lightly and keep aside the batter.
Next steps : Follow the steps from Step 4 to Step 6 of banana cake! Bingo.. Top layer done! Keep it aside.

Bringing it all together:

Step 1: place the banana cake on the cake stand. Apply a layer of vanilla icing and spread it evenly.
Step 2 : place the chocolate cake over it and again apply a layer of vanilla icing and spread well
Step 3: finally place mango cake. Now apply vanilla icing even on sides and frost the cake in fridge for 15min.

Yayyy! Garnish with red cherries and there you go! Surprise your loved ones!!

Banana Eggless Cup Cake

Sweet and delicious flavor of banana, fluffy and soft cakes.. served in a beautiful and moth watering cups, do try it!

Time to Prepare : 30 min | Serves : 6 (Well.. I alone can eat all of them :P)

Ingredients:

  1. All purpose flour (Maida) – 1 cup
  2. Ripened Bananas – 3
  3. Cooking oil – 1/2 cup
  4. Powdered Sugar – 3/4 cup
  5. Baking Powder – 1 table spoon
  6. Baking soda – 1/4 table spoon
  7. Badam(almond) for garnishing

Preparation Method:

Step 1: Sift Maida and baking powder to get a fine mixture. Add powdered sugar to the mixture.
Step 2: Grind bananas and oil to get a semi-liquid mixture.
Step 3: Add the semi liquid mixture to the flour mixture and stir well to make the cake batter, ensure there are no lumps in the batter. Add baking soda and mix lightly and keep aside the batter.
Step 4: Preheat the airfyer/ oven for 5 minutes at 200°C.
Step 5: Insert cup cake cover in the moulds(optional) and grease cup cake moulds with oil. Add the batter into the moulds.
Step 6: Grind almonds(badam) to get granules of almonds. Garnish it on the batter.
Step 7: Cook in the airfryer/oven at 200°C for 10- 15 min. Remove from oven and let it cool down for 5min.

Bingo! delicious cup cakes are ready to serve!
